The advantage of HIGH ROASTING is based on the same principle by which water boils at a lower temperature in the mountains: Reduced atmospheric pressure allows the beans to be heated longer without the risk of charring or burning. No burn means no bitterness!

The longer exposure to heat "excites" the bean and causes the more fully realized flavors to blossom. This full-flavor but never-bitter taste has been described by La Semeuse lovers as the "nectar of coffee".
