A highly unique artisan product with a deep woodsy smell and flavor. A rare highly seasonal cheese, it is only produced only when the temperature dips down from October through March.
A soft cheese with an almost liquid interior, with a washed rind wrapped in spruce bark. Excellent served with Gewurztraminer or other fruity wines.
