Tilsit is made from partially skimmed pasteurized cow's milk, and is semi firm with a springy, crumbly texture, dotted with irregularly spaced tiny holes. Black Knight's flavor is mild and lactic, with bright fruity notes and a clean milky finish. Sold in half pound pieces.
